Spring inspired salad

with lots of vegetables and fruits

I am in love with this salad. It’s a very hearty meal not like you’re chewing only greens, a very stereotypical food for vegans 😅

1. What is required:

  • florets of one medium broccoli (raw)
  • 1 medium sweet apple
  • 1 medium carrot
  • 1 small or ½ medium red onion
  • ~ 150 g. black olives
  • raisins
  • walnuts
  • 2 tbsp tahini
  • black pepper and salt to taste

2. Cut all vegetables/fruits. You can also cut olives in half.

3. Put all vegetables and fruits in one mixing bowl.

4. Dressing: mix tahini with water, salt, and pepper. Pour as much water as needed to have a liquid mixture to pour over the salad.
